If you’re a lady journo (or any journo for that matter), you know cooking is the last “deadline” you have to make during the day and it often gets kicked off the list when other things come up. BUT, sometimes you just want something warm, delicious and nutritious, or you’re entertaining.
If you’re looking for the perfect quick and easy dinner, date night meal or something that heats up quickly, then this is for you!
1 lb pasta (I use G-free pasta, but any pasta will work)
1/4-1/2lb of bacon (or pancetta if you can get it)
grated cheese to taste
6 eggs
pepper to taste (sometimes I use red and black pepper)
In a frying pan, fry the bacon and a little bit of olive oil if you have it. Cut the bacon into cubes. If you’re buying pancetta, it is sometimes cut for you!
Then boil the pasta.
Once the pasta is cooked, drain it and quickly throw in the 6 eggs (raw), cheese, and all the contents (bacon, oil) from the frying pan. Sprinkle with pepper and mix vigorously till the eggs become creamy — they shouldn’t look like scrambled eggs, but they shouldn’t be too wet (or uncooked) either. The heat of the pasta and the bacon will cook them.
